Probably to avoid delays and not have people do both night stints.

There is one. It's done so the 2nd stint can start before the first has finished.

And why would that need to happen - but not for the middle stint. Especially when there is 20 minutes 'gap' in racing time each stint?

I'm very confused about the rationale for this.

These races have been done for years now and it is notorious for them to fall behind schedule. This is their way to get back on schedule, because you don't have to wait for someone in the previous stint.
